## Wine making process

Espelt Sol Organic 2019 underwent cold maceration followed by fermentation. A portion of the wine (58%) was fermented in stainless steel tanks, while the remainder was fermented in French oak barrels. After fermentation, 42% of the wine was aged for six months in 500-liter French oak barrels of one and two years of age, with a medium toast. The grapes for this wine were vinified separately.
