## About this wine

Domaine Simon Bize & Fils, based in Savigny-l(es-Beaune, was established in 1880. Under the current direction of Chisa Bize, the estate continues its long tradition of organic viticulture and minimal-intervention winemaking. 'Sola' is an experimental micro-cuvée produced from organically farmed Pinot Noir vines in Ladoix-Serrigny. Crafted with a low-sulfur ethos, this unique bottling showcases the domain's commitment to high whole-cluster fermentations and pure expressions of terroir.

## Interesting facts

- Sola is an experimental micro-cuvée crafted with 100% whole-cluster fruit and low-intervention methods by Chisa Bize.
- Fermentation relies on traditional foot punch-downs (pigeage "0 pied) in open vats.
- Aged exclusively in neutral French oak barrels with zero percent new oak to preserve fresh red fruit purity.

## Food pairing

Pinot Noir's high acidity and delicate red fruit profile harmonizes effortlessly with earthy mushrooms, roasted poultry, and cured meats without overwhelming lighter proteins or subtle flavors.

## Wine making process

Hand-harvested from organic plots, the fruit undergoes 100% whole-cluster fermentation driven by ambient yeasts. Vinification incorporates traditional foot punch-downs (pigeage "0 pied) and semi-carbonic maceration in open fermentation tanks over two to three weeks. The wine is aged for 12 months in neutral, used French oak barrels without new oak, followed by 5 to 6 months in stainless steel. It is bottled unfined and unfiltered with minimal sulfur added.
