## About this wine

Conceived by winemaker Franz Weninger, the Solidarität ('Solidarity') series aims to create accessible, everyday biodynamic natural wines designed to foster community and fellowship. Grown on deep heavy loam and clay soils in Horitschon and Ritzing within Burgenland, Austria, the wine highlights climate-resilient viticulture through the PIWI variety Souvignier Gris. The Weninger family has farmed in Central Burgenland since the 1830s, practicing certified organic and biodynamic farming across Austria and Hungary.

## Interesting facts

- Made from 100% Souvignier Gris, a PIWI variety requiring up to 80% fewer plant protection sprays.
- Conceived as an accessible wine line to foster community and fellowship without financial strain.
- Aged for 7 months on full yeast lees in large neutral wooden casks prior to bottling.

## Food pairing

The high, precise acidity and subtle lees texture of this white wine cut beautifully through rich, pan-fried dishes and soft cheeses while elevating delicate fish and seafood.

## Wine making process

Crafted from hand-harvested Souvignier Gris grapes grown on young vines. Fermentation occurs spontaneously using ambient native yeasts in neutral vessels. Following low-intervention practices, the wine undergoes aging on its full yeast lees in large 2,900L neutral wooden casks for seven months. It is bottled unfined and unfiltered with minimal added sulfur dioxide.
