## About this wine

Azienda Agricola Le Coste was founded in 2004 in Gradoli, Lazio, near Lake Bolsena, by Gianmarco Antonuzzi and Clémentine Bouveron. Gianmarco, a former lawyer and wine journalist, honed his viticultural skills in Alsace under Bruno Schueller before returning to Italy to establish an estate dedicated to organic and biodynamic polyculture. The SOS Lago project was established as an activist initiative to support local communities and environmental defense against proposed industrial geothermal installations threatening the volcanic aquifers of Alta Tuscia.

## Interesting facts

- Created as part of an activist campaign to protect Lake Bolsena's ecosystem from geothermal drilling.
- Founder Gianmarco Antonuzzi trained under legendary Alsace vigneron Bruno Schueller.
- Utilizes short whole-cluster carbonic maceration on aromatic Moscato grapes.

## Food pairing

The combination of vibrant acidity, subtle tannic grip from skin contact, and rich aromatic intensity allows this orange wine to cut through rich, savory fats. Rich pasta dishes with egg yolk or sheep's milk cheese interact beautifully with the wine's structured nature without overwhelming its delicate profile.

## Wine making process

Crafted from 30-year-old vines planted in loose, iron-rich volcanic soils at 350 meters altitude. The hand-harvested grapes undergo seven days of whole-cluster carbonic maceration with indigenous yeasts. Following fermentation, the wine ages for five months in stainless steel tanks and an additional seven months in bottle. It is bottled unfined, unfiltered, and without any added sulfur dioxide.
