## About this wine

Domaine des Lampyres is led by François-Xavier ('F.X.') Dauré, a fourth-generation grape grower from Espira-de-l'Agly in France's Roussillon region. After spending five years working alongside Tom Lubbe at the legendary natural wine estate Domaine Matassa, F.X. established his own domaine. Sous le Vent Rouge is a unique Vin de France co-ferment from schist and clay-limestone parcels.

## Interesting facts

- Producer F.X. Dauré worked early mornings with a headlamp, earning the nickname 'lampyre' (glow-worm) from locals.
- F.X. spent five years working under natural wine pioneer Tom Lubbe at Domaine Matassa.
- This red wine co-ferments red Syrah with aromatic white Muscat à Petits Grains in terracotta amphorae.

## Food pairing

The wine's bright acidity, light-to-medium tannins, and vibrant berry-floral profile complement lean roasted meats, duck, and herb-driven Mediterranean dishes without overpowering the palate.

## Wine making process

The grapes undergo a whole-bunch co-harvest and a four-day maceration in tank. Spontaneous fermentation begins with naturally occurring yeasts. On the fifth day, the grapes are pressed and moved to terracotta amphora to complete fermentation. Following malolactic fermentation, the wine rests briefly in stainless steel before bottling without fining or filtration, with minimal added sulfur.
