## About this wine

Cantina Ribelà was founded in 2014 by Chiara Bianchi and Daniele Presutti in Monte Porzio Catone, situated in Lazio's Castelli Romani regional park. The winery name 'ribelà' comes from a local dialect word meaning to cover young vines with soil, representing a fresh start and reconnection to historic land. Located in the Pentima dei Frati amphitheater valley at 320 meters elevation, the estate operates under organic and biodynamic principles. The cuvée 'Soyl' blends the words soul and soil to reflect the estate's volcanic origins.

## Interesting facts

- The name 'Soyl' is a portmanteau of the English words 'Soul' and 'Soil'.
- Fermentation incorporates a custom artisan vessel carved from local volcanic peperino stone.
- Annual production is extremely small, yielding only around 600 bottles per vintage.

## Food pairing

The electric acidity and distinct mineral salinity of this natural rosé cut through rich pork fats and oily fish, while its delicate red fruit profile and gentle texture complement light poultry and shellfish without overpowering them.

## Wine making process

Soyl is produced via the direct co-fermentation of hand-harvested red Cesanese and white Malvasia grapes pressed together. Spontaneous fermentation occurs with indigenous yeasts in open vats without temperature regulation, incorporating a custom fermentation vessel crafted from local volcanic peperino stone. The wine is bottled unclarified, unfiltered, and with no chemical additives, keeping total sulfur dioxide under 20 mg/L.
