## About this wine

Azienda Agricola Arianna Occhipinti is located near Vittoria in southeastern Sicily. Founded by Arianna Occhipinti at just 21 years old, the estate has earned global acclaim for its commitment to low-intervention, organic, and biodynamic viticulture. The name SP68 pays tribute to Strada Provinciale 68, an ancient provincial road running past the vineyards that Sicilian farmers have traveled for over three millennia to bring wine from inland hills down to Mediterranean trade ports.

## Interesting facts

- Named after Strada Provinciale 68, a historic route used for wine trade for over three millennia.
- Arianna Occhipinti established her celebrated estate at just 21 years old.
- Inverts local tradition by prioritizing 70% Frappato for freshness over dominant Nero d'Avola.

## Food pairing

The bright acidity and delicate tannin structure make this light-to-medium-bodied natural red exceptionally versatile. Its refreshed fruitiness and subtle salinity complement vegetable dishes like caponata and classic tomato pastas, while remaining gentle enough to pair effortlessly with meaty fish such as swordfish or tuna without creating metallic notes.

## Wine making process

Sourced from 15-year-old vines grown at 280 meters elevation on calcareous sand over limestone subsoils. The grapes—70% Frappato and 30% Nero d'Avola—are harvested manually from late September to early October. Fermentation occurs spontaneously with native yeasts in gravity-fed tanks with 15 days of skin contact and no artificial temperature control. The wine ages for 6 months in concrete tanks and 1 month in bottle prior to release, bottled unfined and unfiltered.
