## About this wine

The Durbanville Hills Sparkling Sauvignon Blanc is a South African wine from the Durbanville region. Established in 1998, Durbanville Hills winery was founded by local vineyard owners to highlight the unique qualities of their appellation. The region's cool climate, influenced by coastal breezes and mists, contributes to the slow ripening of grapes, fostering intense character. The wine is crafted to reflect the 'heartbeat of Durbanville Hills,' drawing inspiration from the creative energy of Cape Town and representing a connection between viticulture and urban culture.

## Wine making process

The Durbanville Hills Sparkling Sauvignon Blanc is produced from 100% Sauvignon Blanc grapes sourced from shareholder-growers in the Durbanville appellation. The grapes are hand-harvested in the early morning at optimal ripeness. Vinification involves de-stemming and separating free-run juice from the skins. The juice is settled, racked, and inoculated with selected yeast strains for fermentation at 15°C over 14-23 days. Following fermentation, the wine is racked from primary lees. The characteristic sparkle is achieved by adding carbon dioxide during the bottling process. The winery follows sustainable practices, including Integrated Production of Wine (IPW) and the protection of Renosterveld.
