## Wine making process

La Valentina Spelt Riserva 2017 is produced from 100% Montepulciano grapes. The harvest is conducted by hand in early October. Fermentation occurs in stainless steel tanks for about three weeks. The wine is then aged for 16 months in a mix of large Slavonian oak barrels (25 hl), new and second-fill barriques, and tonneaux. It receives a further period of aging in 25 hl oak barrels, followed by one year in bottle before commercialization. The estate employs organic and biodynamic farming practices.
