## Wine making process

The Spier Seaward Cabernet Sauvignon 2021 is produced from 100% Cabernet Sauvignon grapes. Following hand-harvesting and individual sorting, the grapes underwent a two-day cold soak to enhance color and fruit preservation before fermentation in stainless steel tanks with inoculated yeast. The wine was then aged for 14 months in a mix of 80% French and 20% American oak barrels, predominantly second and third-fill. Spier Wines emphasizes sustainable practices, including waste recycling and water reclamation, in their winemaking approach.
