- 100% of the estate's wastewater is recycled and re-used for organic vineyard irrigation.
- The estate practices regenerative agriculture, using high-density grazing to naturally fertilize the soil.

## Food pairing

This medium-bodied red blend balances fresh acidity and fine tannins, making it highly versatile. It pairs exceptionally well with rich, tomato-based pasta dishes and savory beef casseroles, where the acidity cuts through the richness and the fruit notes complement the savory elements.

## Wine making process

The grapes are harvested at optimal ripeness from vineyards with decomposed granite and weathered sandstone soils. After de-stemming and gentle crushing, fermentation takes place in stainless steel tanks with a mix of cultured and natural yeasts. 20% of the wine is matured in neutral French oak barrels for 8 to 10 months, while the remaining 80% is aged in stainless steel tanks with French oak staves to preserve fresh fruit character while adding structural complexity.
