## About this wine

Minimalist Wines' 'Stars in the Dark' 2022 is a 100% Syrah from the W.O. Cape Agulhas in South Africa. The wine's name reflects the challenging yet rewarding environment of its origin, the southernmost tip of the continent, where vines endure significant exposure. Winemaker Sam Lambson, who established the winery at 21, champions a philosophy of minimal intervention to allow the vineyard's character to shine through. The Cape Agulhas region's cool, maritime climate, influenced by ocean breezes, is particularly suited to Syrah, contributing a distinct profile to the wine. The 2022 vintage experienced a cool, late growing season with extended ripening periods, fostering ripe tannins and flavor concentration.

## Wine making process

The 'Stars in the Dark' 2022 is produced from 100% Syrah. Approximately one-third of the harvest underwent whole-bunch fermentation, with gentle foot-stomping and crushing. Natural fermentation took place in open and closed fermenters, managed with single daily pump-overs or punch-downs. Following fermentation, the wine was aged for 12 months in neutral French oak barrels (228L and 300L, 3rd and 4th fill). The 2022 vintage was noted for its cool, late season, allowing for extended ripening and contributing to ripe tannins and flavor intensity.
