## About this wine

Suara is a red wine produced by Karretània, a small, family-run boutique winery in Consell, Mallorca. Founded by agronomists Antoni Sans and Georgina Brunet, the estate focuses on organic viticulture under the IGP Vi de la Terra Mallorca. The Suara line is specifically designed to showcase how international noble varieties adapt to the unique clay-gravel soils of Mallorca, offering a distinct Mediterranean expression of these global grapes.

## Interesting facts

- The name Suara comes from the Mallorcan proverb 'Si no és ara, serà Suara' meaning 'If not now, it will be later/soon'.
- The winery employs a gravity-flow system, completely avoiding mechanical pumps to handle the grapes as gently as possible.
- Production is extremely limited, with the 2023 vintage yielding exactly 1,865 bottles.

## Food pairing

This medium-bodied red wine with fresh acidity and integrated tannins pairs beautifully with roasted meats and savory Mediterranean dishes. The wine's structure cuts through the richness of lamb and pork, while its herbal undertones complement wild asparagus and vegetable stews.

## Wine making process

The grapes are hand-harvested in small 10 kg crates and cold-macerated to optimize fruit extraction. Fermentation and maceration take place at a controlled temperature of 23°C for 17 days. Karretània utilizes a gravity-flow method to handle the fruit gently without mechanical pumps. The wine is aged for six months in 500-liter French oak barrels, followed by a brief settling period in stainless steel tanks before bottling.
