## About this wine

Submission is a bold creation from 689 Cellars, founded by Curtis McBride and winemaker Kent Rasmussen. The winery's name is deeply rooted in Chinese numerology, where the numbers six, eight, and nine represent happiness, wealth, and longevity respectively. Together, they symbolize balance and harmony, which is reflected in the approachable and expressive style of their wines. The 'Submission' line invites wine lovers to surrender their senses and enjoy a high-quality, lavishly styled California wine without pretense. Sourced from premium vineyards across multiple renowned counties, it offers a rich, Napa-style weight and complexity at an accessible price point.

## Interesting facts

- The name 689 represents the Chinese numerology for happiness (6), wealth (8), and longevity (9), reflecting the winery's philosophy of balance.
- The bottle features the playful motto: 'Everyone must submit to the man every once in a while. Why not enjoy the damn experience.'
- The wine is a multi-county blend sourcing fruit from Sonoma, Napa, Lodi, and Mendocino to create a consistent, high-quality profile.

## Food pairing

This full-bodied, fruit-forward Cabernet Sauvignon pairs exceptionally well with rich, savory, and smoky dishes. The wine's soft tannins and moderate acidity cut through the fat of grilled and roasted meats, while its sweet oak and dark berry flavors complement caramelized barbecue sauces and charred crusts.

## Wine making process

The 2019 Submission Cabernet Sauvignon is a carefully crafted blend of 86% Cabernet Sauvignon, 8% Malbec, and 6% Merlot. The grapes are sourced from selected vineyards in Sonoma, Napa, Lodi, and Mendocino counties, allowing the winemakers to achieve optimal balance and consistency. Following a warm and dry summer that allowed the grapes to reach perfect phenolic ripeness, the fruit was harvested and destemmed. Fermentation took place in temperature-controlled stainless steel vats to preserve the vibrant primary fruit characteristics. The wine was then aged for 10 months in French oak barrels, with 30% new oak, to integrate structured tannins and impart complex oak notes.
