## About this wine

The Duemani Suisassi Syrah 2019 is a single-varietal Syrah from the Costa Toscana IGT in Tuscany, Italy. Produced by Azienda Vitivinicola Duemani, the wine is crafted from biodynamically grown grapes, holding Demeter certification. The estate, founded by Elena Celli and Luca D'Attoma in 2000, is situated on a steep hillside vineyard facing the Tyrrhenian Sea, characterized by clay and stony soils at an altitude of 250-300 meters. The producer's philosophy centers on environmental respect and biodynamic cultivation to achieve pure, expressive wines. The 2019 vintage was influenced by extreme summer heat and a milder fall, contributing to the wine's intensity.

## Interesting facts

- Certified biodynamic with Demeter certification.
- Vineyards are situated on steep, challenging hillsides.
- Luca D'Attoma is a renowned winemaker and consultant.
- The wine is bottled without further racking or filtration.

## Food pairing

The wine's full body and structured tannins are well-suited to rich, protein-heavy dishes, where they can complement the meat's texture and flavor. Herbal notes in the wine can echo those in savory preparations, while dark fruit elements can be enhanced by fruit-based sauces or accompaniments.

## Wine making process

The Duemani Suisassi Syrah 2019 is produced from 100% Syrah grapes, hand-harvested and selected from the estate's steep, clay-rich, stony vineyard. Approximately 30% of the harvest undergoes whole-cluster fermentation. Fermentation takes place in conical oak barrels and small French barriques, followed by a maceration period of about 30 days. The wine is then aged for 22 months in French oak barrels, with 80% being first-fill and 20% second-fill. It is bottled without further racking or filtration.
