## About this wine

The Summum Chardonnay 2021 from Evening Land Vineyards originates from the Eola-Amity Hills AVA in Oregon's Willamette Valley. It is produced from 100% Chardonnay grapes, specifically from 14 vine rows in the upper, iron-rich volcanic soil section of the Seven Springs Estate Vineyard. The vineyard is farmed using biodynamic practices. This wine is considered the estate's unofficial tête de cuvée, aiming to capture the precise expression of its unique vineyard site.

## Interesting facts

- Sourced from just 14 specific vine rows.
- Vineyard farmed using biodynamic practices.
- Unofficial 'tête de cuvée' of the estate.

## Food pairing

The wine's bright acidity and minerality cut through the richness of seafood and white meats, while its nuanced fruit and subtle oak notes complement earthy flavors like mushrooms and the sweetness of fruit-based accompaniments.

## Wine making process

The 2021 Summum Chardonnay is produced using 100% Chardonnay grapes. The winemaking process begins with whole cluster pressing. Fermentation is carried out using native yeasts in 500L Austrian oak Stockinger puncheons, with 70% of these being new oak. Following fermentation, the wine is aged for nine months in puncheon, then transferred to stainless steel for an additional six months. A total of 350 cases were produced.
