## About this wine

Högberga Superiore is a red wine from the Maremma region of Tuscany, Italy, produced by Högberga Vinfabrik, Sweden's first Tuscan winery. The grapes are grown in mineral-rich sandy soil near the Tyrrhenian Sea. The winery's philosophy emphasizes customer involvement in the winemaking process, from harvest to bottling. The 2017 vintage was hand-harvested in early September and is noted for its aging potential.

## Interesting facts

- Sweden's first Tuscan winery.
- Customers can participate in winemaking.
- Grapes are transported to Stockholm for vinification.
- Limited production of only 970 bottles.

## Food pairing

The wine's full body and robust structure are well-suited to rich, protein-heavy dishes. Tannins in the wine will complement the protein in red meats, softening as they interact. Flavors of dark fruit and oak can echo or contrast with the savory elements of the food.

## Wine making process

Högberga Superiore begins with hand-harvested grapes from organic farms in Maremma, Tuscany. The grapes are transported to Högberga Vinfabrik in Stockholm for processing. After crushing and destemming on September 9th, the must is kept cool. Controlled alcoholic fermentation occurs in stainless steel tanks up to 29°C, followed by extended maceration. Pressing takes place on day 18 of maceration. The wine then ages for 17 months and 3 weeks in French Burgundy barrels before bottling in early September 2019. Production for this vintage was limited to 970 bottles.
