## About this wine

Domaine Chibaou's Surnaturel Merlot 2020 is a red wine from Bordeaux, France, produced by Domaine Chibaou. This wine is characterized by its natural winemaking approach, being certified organic and vegan-friendly, and made with no added sulfites or inputs. The estate's winemaking journey began with the current owner's great-grandfather in the early 1900s, with a transition to organic farming in 2008. The 'Surnaturel' cuvée is a collaborative effort with Vintrépides. The vineyard is located on clay-limestone terroir at a high elevation with a steep, windy exposure, which promotes grape concentration.

## Food pairing

The wine's full body and concentrated fruit notes can stand up to richer proteins. The absence of added sulfites can also make it a gentler pairing for those sensitive to them.

## Wine making process

The Surnaturel Merlot 2020 is produced from 100% Merlot grapes grown on clay-limestone terroir. The vineyard is managed using certified organic farming methods. Harvest is conducted mechanically at a late stage of ripeness. In the cellar, the grapes undergo sorting, followed by vinification in stainless steel vats with fermentation at low temperatures and extended maceration. The wine is subsequently aged in concrete vats. The production volume is approximately 18,000 bottles annually.
