## About this wine

Celler de les Aus is the minimal-intervention and natural winemaking arm of the Pujol-Busquets family, located within the coastal Serralada de Marina Natural Park in D.O. Alella, Catalonia. Every wine in the lineup is named after a bird native to the natural park, with Tallareta taking its name from the Sardinian warbler. The winery is dedicated to certified organic viticulture, zero-sulfite natural winemaking, and eco-friendly packaging initiatives, including bottling in reused glass vessels.

## Interesting facts

- Named after 'Tallareta', the Catalan word for the Sardinian warbler bird.
- Macerated for two months in custom vessels made from local decomposed granite.
- Bottled in reused Cava bottles to reduce carbon emissions.
- Made with zero added sulfites by natural wine pioneers in D.O. Alella.

## Food pairing

Skin-contact orange wines combine the fresh acidity of whites with the gentle tannic structure of reds. The coastal salinity, bright citrus notes, and subtle grip of Tallareta make it extremely versatile. It cuts through oily fish and soft cheeses while harmonizing with aromatic herbs, citrus glazes, and savory Asian preparations.

## Wine making process

Crafted via the traditional skin-contact 'brisat' technique using organically farmed Pansa Blanca and Pansa Rosada grapes. Fermentation takes place spontaneously in custom vessels made from local decomposed granite ('sauló') and clay. The grape juice remains in contact with the skins for two months, where natural thermal currents maintain lees suspension without mechanical pumping. The wine is bottled young without added sulfites or oak aging.
