## About this wine

Celler Tanca Els Ulls was founded by siblings Cesc and Helena Boronat in Nulles, Catalonia. The name translates to 'Close your eyes,' referencing Cesc's leap of faith in 2014 when he stopped selling his family's grapes to regional cooperatives and began crafting low-intervention natural wines. The estate centers around the Finca Bellavista vineyard, an 80-year-old plot planted by their grandfather just 20 minutes from the Mediterranean Sea.

## Interesting facts

- The winery name translates to 'Close your eyes' in Catalan, representing the leap of faith into natural winemaking.
- Grapes are sourced from Finca Bellavista, an 80-year-old vineyard planted by the winemaker's grandfather.
- Made naturally with zero added sulfites and natural bottle fermentation via the Ancestral Method.

## Food pairing

The bright, sea-breeze-influenced acidity and crisp saline finish of this bone-dry Pét-Nat slice through fried seafood textures and highlight the briny richness of fresh oysters and Spanish tapas.

## Wine making process

Crafted using the ancestral method (Pétillant Naturel) with 100% Macabeo grapes from old vines. The grapes undergo a two-day skin maceration before spontaneous fermentation begins in stainless steel tanks using native wild yeasts. The wine is bottled before primary fermentation completes to naturally trap effervescence inside the bottle. It is aged on fine lees for 3 to 4 months, unfiltered, unclarified, and bottled without added sulfites.
