## About this wine

I Lauri was established by the Di Tonno family in Loreto Aprutino, a historic region originally named Lauretum after its abundant bay laurel trees. Expanding their vision, the family supervises dedicated 30-hectare vineyards in the Veneto region to create this expression of Pinot Grigio. The cuvée name Tavo pays homage to the Tavo River, which flows from high in the Gran Sasso mountain range. The winery emphasizes sustainable practices, powering production entirely with clean wind-generated energy and utilizing lightweight glass packaging.

## Interesting facts

- The cuvée is named after the Tavo River, originating nearly 2,000 meters high near the Gran Sasso mountains.
- Produced using 100% clean, wind-generated energy and bottled in eco-friendly lightweight glass.
- The winery name comes from Loreto Aprutino's ancient name Lauretum, inspired by bay laurel trees.

## Food pairing

The light-to-medium body and crisp acidity of Pinot Grigio make it a natural pairing for delicate seafood, soft creamy cheeses, and fresh vegetables. The bright acidity cuts through rich sauces like lemon-butter, while harmonizing with light, savory charcuterie.

## Wine making process

Grapes are harvested by hand in late August and early September from vines aged 10 to 15 years grown in calcareous soil. After destemming and gentle pneumatic pressing, the juice undergoes short cold static decantation in stainless steel. Fermentation takes place with selected yeasts at controlled temperatures of 18 to 20 degrees Celsius for approximately ten days. The wine then rests for two months on fine lees in stainless steel vats before bottling to retain freshness and add silken weight.
