## About this wine

The Tenuta Carobbio Chianti Classico Riserva 2016 is a 100% Sangiovese from the Chianti Classico DOCG appellation in Tuscany, Italy. Produced by Tenuta Carobbio, an estate with roots in the 15th century, the wine is overseen by the Novarese family and enologist Dario Faccin. Faccin's expertise in regional soils informs the winemaking. The estate is situated in a natural amphitheater in Panzano in Chianti, a sub-region recognized for its quality. The 2016 vintage is characterized by its ability to age gracefully and develop complex tertiary notes.

## Interesting facts

- Estate dates back to the 15th century.
- Enologist Dario Faccin previously mapped regional soil types.
- Panzano in Chianti is a highly regarded sub-region.
- 18 months in French oak barrels precede bottle aging.

## Food pairing

The wine's firm tannins and savory notes are well-suited to complement the richness of grilled and roasted red meats, particularly lamb and beef. Its acidity cuts through the fat, while the wine's inherent herbal and earthy undertones can echo flavors in dishes featuring similar ingredients like rosemary or mushrooms.

## Wine making process

The Tenuta Carobbio Chianti Classico Riserva 2016 is made from 100% Sangiovese. The grapes are hand-harvested in October. Fermentation takes place for 10 days in steel tanks at controlled temperatures, with maceration lasting over 15 days. The wine is then aged for 18 months in French Oak barrels, followed by 6 months of bottle refinement. The soils of the vineyard are composed of limestone, galestro, and clay, with southwest-facing exposures.
