## About this wine

Giorgos Dimakopoulos and agronomist Varvara Spiliotopoulou established Dimakopoulos Winery in 2008 in Vasiliko, within the Achaia region of Greece's Peloponnese peninsula. The boutique estate spans 6.5 hectares located roughly 130 meters above sea level near the coast. The winery focuses on certified organic viticulture and reviving near-extinct native Greek grape varieties, producing low-intervention wines that highlight their indigenous coastal terroir.

## Interesting facts

- Koritsanos is an ultra-rare indigenous Greek grape native to Achaia.
- Aged completely in stainless steel with zero oak contact to maintain purity.
- Bottled unfiltered and unfined according to low-intervention natural principles.

## Food pairing

The bright natural acidity and fine, subtle tannins of this medium-bodied red make it an exceptional match for savory Mediterranean dishes, grilled lighter meats, and herb-infused roasted vegetables without overwhelming the food.

## Wine making process

Harvested entirely by hand from organically farmed vines, the grapes undergo spontaneous fermentation driven exclusively by indigenous yeasts. Maceration and skin contact last between 15 and 20 days. To preserve raw fruit purity and natural acidity, the wine ages for eight months strictly in stainless steel tanks without oak contact. It is bottled unfined and unfiltered with minimal added sulfur dioxide.
