## About this wine

The Estate Red is produced by Jumbo Time Wines, a project launched in Los Angeles by Omar Koukaz and Jonathan Yadegar. Sourced from the Massa Vineyard in the cool coastal Carmel Valley AVA, this wine represents an elegant, high-acidity expression of Pinot Noir. The maritime influence allows grapes to ripen slowly while maintaining low potential sugar levels, resulting in a balanced, fresh wine.

## Interesting facts

- Sourced from Massa Vineyard in Carmel Valley, where cool maritime conditions keep alcohol levels exceptionally low.
- Made from two distinct Pinot Noir grafts grown side-by-side in the same vineyard plot.
- A low-intervention natural wine bottled unfined and unfiltered with only 20 ppm total sulfites.

## Food pairing

The light body, low tannins, and vibrant acidity of this natural Pinot Noir complement delicate meats, poultry, rich fish, and savory mushroom dishes without overpowering their subtle flavors.

## Wine making process

Organically farmed grapes from two side-by-side Pinot Noir grafts are harvested and fermented using native wild yeasts. The caps receive two manual punch downs daily during active fermentation. The wine is aged for nine months in neutral French oak barrels before being bottled unfined and unfiltered with a minimal total SO2 addition of 20 ppm.
