## About this wine

Nuria Renom, formerly the head sommelier at Barcelona's iconic natural wine venue Bar Brutal, began making small-batch wines in 2014. In 2021, together with her partner Arola Tous-Galí, she established the Les Cantarelles project at the Can Barceló estate in Sant Martí del Sarroca. Sourcing fruit from high-altitude calcareous soils in Alt Penedès and Massís del Garraf, they craft unadulterated wines bottled outside official appellation rules to maintain complete natural winemaking freedom.

## Interesting facts

- Founder Nuria Renom was head sommelier at Barcelona's iconic natural wine bar Bar Brutal.
- This Pét-Nat blends red Tempranillo with highly aromatic white Muscat of Alexandria.
- Bottled mid-fermentation using the Méthode Ancestrale with zero added sulfites.

## Food pairing

The bright acidity and refreshing effervescence cut effortlessly through the richness of charcuterie, fried seafood, and soft cheeses. Additionally, the aromatic, floral contribution of skin-contact Muscat pairs exceptionally well with mild spice and vibrant citrus flavors.

## Wine making process

Hand-harvested Tempranillo undergoes a four-day maceration in stainless steel before blending with Muscat of Alexandria, which sees five days of skin contact. Fermentation is spontaneous via wild yeasts without temperature control. The wine is bottled before primary fermentation finishes to capture natural effervescence via the Méthode Ancestrale. After resting on its lees in bottle for nine months, it is hand-disgorged and released unfined, unfiltered, and with zero added sulfites.
