## About this wine

Weingut Thörle, situated in the village of Saulheim in Rheinhessen, has a winemaking history dating back to the 17th century. Since taking over in 2006, brothers Christoph and Johannes Thörle have propelled the estate to international acclaim with a relentless focus on organic viticulture and single-vineyard expressions. The Saulheimer Probstey vineyard is a premier south-facing site defined by warm microclimates and ancient sea-sand limestone soils. The 2024 vintage yielded extraordinarily small quantities, resulting in a bottling of immense focus, structure, and intense mineral drive.

## Interesting facts

- Yields in 2024 dropped below 20 hectoliters per hectare, creating exceptionally concentrated fruit.
- The Probstey vineyard features ancient yellow sea-sand layers over deep limestone beds.
- The Thörle brothers transformed their family estate into a top red wine producer after taking over in 2006.

## Food pairing

This structured and concentrated Pinot Noir pairs seamlessly with flavorful, medium to full-bodied meats. Its fine tannins cut through richness, while its bright limestone acidity cuts through savory fat without overwhelming the food.

## Wine making process

Organically harvested by hand in mid-September 2024, the Spätburgunder grapes underwent strict selection. Fermentation occurred spontaneously using native vineyard yeasts in open wooden fermenters over 18 days. The wine was then aged for approximately 18 months in French oak barriques, with 50% new oak and 50% neutral oak. It was bottled unfiltered to preserve its fine-grained tannin structure and vibrant limestone freshness.
