## About this wine

Weingut Thörle is a historic winemaking estate located in Saulheim, Rheinhessen, dating back to 1517. Since taking over management in 2006, brothers Johannes and Christoph Thörle have elevated the estate into Rheinhessen's top tier of quality producers. Saulheimer Probstey is the warmest single-vineyard site in their portfolio, situated on a south-facing slope with deep limestone subsoil, clay marl, and yellow sea sand, creating dry Rieslings of remarkable structural integrity and minerality.

## Interesting facts

- Weingut Thörle's winemaking lineage in Saulheim spans over 500 years, tracing back to 1517.
- Probstey is Thörle's warmest single vineyard, featuring unique subsoils of ancient yellow sea sand and clay marl.
- Fermented 100% spontaneously using natural ambient yeasts inside traditional 1,200-liter oak Stückfass casks.

## Food pairing

The vivid limestone acidity and structural weight of this dry single-vineyard Riesling cleanly cut through rich protein dishes, butter sauces, and creamy textures while balancing delicate herbal and aromatic spice notes.

## Wine making process

Grapes are hand-harvested organically via selective picking. After gentle crushing, the fruit undergoes a short cold maceration of approximately four hours for aromatic extraction. Fermentation is 100% spontaneous with wild yeasts. The wine matures on its full lees for roughly eight months in traditional 1,200-liter neutral German oak casks (Stückfass), enhancing body and mouthfeel while preserving site purity.
