## About this wine

Weingut Thörle is located in Saulheim within the Rheinhessen region of Germany, where winery cellar history dates back to 1517. Today, brothers Johannes and Christoph Thörle manage the family estate, focusing on single-vineyard wines that express the unique limestone terroirs of the area. The Schlossberg vineyard is their premier west-facing grand site, situated at 170 to 235 meters elevation with deep clay and limestone marl soils rich in iron oxides and marine fossils.

## Interesting facts

- Cellar history at Weingut Thörle dates back to 1517, though brothers Johannes and Christoph modernized the estate in 2006.
- Schlossberg vineyard soils are rich in ancient marine fossils and natural aquifers.
- Thörle operates independently outside the VDP, utilizing their own single-vineyard quality pyramid.
- Fermented entirely with wild yeasts and aged half in neutral oak casks and half in stainless steel.

## Food pairing

The wine's intense, high acidity and stony salinity slice effortlessly through rich textures like hollandaise or mushroom cream while enhancing delicate seafood and poultry dishes without overpowering subtle flavors.

## Wine making process

Farming is certified organic with selective hand-harvesting at optimal ripeness. Grapes undergo gentle crushing and pressing, followed by spontaneous fermentation using natural wild yeasts for 6 to 8 weeks. The wine matures on its full lees for 8 months before bottling, split equally between traditional large neutral oak casks (Stückfass) and stainless steel tanks.
