## About this wine

Azienda Agricola Tommaso Cappa was founded in 2020 by enologist Tommaso Cappa and architect Agnese Caprioli in Borgata Valdibà, near Dogliani in Piedmont. Working with small plots of old vines at elevations up to 400 meters on calcareous-clay marl soils, Tommaso draws on international winemaking experience and his work with biodynamic projects in Alba to create artisanal, micro-allocated wines that reflect the rugged terroir of the Langhe.

## Interesting facts

- Founded in a tiny 40 m² cellar surrounded by old vines near Dogliani.
- Labels often feature playful anagrams of winemaker Tommaso Cappa's name.
- Tommaso also serves as a vineyard foreman overseeing biodynamic research in Alba.

## Food pairing

The wine's vibrant acidity, firm tannin structure, and medium-plus body require savory dishes rich in fats, protein, or subtle earthiness. Meat-driven pasta dishes, roasted meats, and regional aged cheeses soften the tannin structure while enhancing the wine's vibrant dark berry and floral aromas.

## Wine making process

Grapes are farmed according to organic and biodynamic principles and harvested strictly by hand. Vinification relies on spontaneous fermentation driven by indigenous yeasts in stainless steel tanks, utilizing whole-cluster fermentation without stems. The wine undergoes ~17 days skin-contact maceration and ages for 12 months in used oak barrels to facilitate micro-oxygenation without imparting oak flavors. Bottled unfiltered with minimal added sulfur.
