## About this wine

Domaine Ça Boit Libre was established by Damien Bastian in Haute-Savoie near Lake Geneva. After working as an agricultural engineer in Chad and discovering natural wine in Geneva, Bastian trained under renowned producers Dominique Lucas and Jean-François Ganevat. In 2020, he acquired vineyards in Carra. Ton Rouge du Lac comes from steep south-facing slopes of eroded limestone clay and glacial moraine, where proximity to the lake creates a unique alpine microclimate.

## Food pairing

Vibrant alpine acidity and silky, gentle tannins make this light-bodied red ideal for elevated pairings with rich poultry, savory cured meats, and earthy mushroom dishes, slicing cleanly through fat while respecting delicate flavors.

## Wine making process

Farmed organically using biodynamic principles, grapes are manually harvested in small crates. Whole clusters undergo spontaneous fermentation with indigenous yeasts in stainless steel and concrete vessels, followed by two weeks of semi-carbonic maceration without mechanical extraction. The wine ages for 10 months on fine lees in neutral oak barrels before being bottled unfined, unfiltered, and with zero added sulfur.
