## Food pairing

The wine's crisp acidity cuts through rich sauces and complements fatty fish, while its citrus and herbal notes harmonize with fresh ingredients and zesty dressings. It also pairs well with the subtle minerality found in goat cheese and seafood.

## Wine making process

Domaine Jacky Marteau's Touraine Sauvignon is produced using 100% Sauvignon Blanc grapes. A portion of the harvest, ranging from one-third to 60% depending on the vintage, undergoes skin contact maceration to enhance body and fruit. This is followed by gentle pneumatic pressing and a cold maceration at 5°C for approximately seven days. Fermentation takes place in stainless steel tanks at a controlled temperature of 17°C for three to four weeks. The wine is then aged on its fine lees in stainless steel to preserve its freshness and aromatic intensity before being bottled.
