## Food pairing

The vibrant acidity and bright citrus characteristics effortlessly cut through rich, creamy, or salty traditional Alsatian dishes like raclette and choucroute, while complementing delicate fresh seafood and goat cheese with precision.

## Wine making process

Hand-harvested from clay-limestone and limestone-sandstone soils in Mittelbergheim and Mutzig, the grapes undergo direct pressing with a brief overnight maceration. Fermentation occurs spontaneously using indigenous yeasts. The wine completes full malolactic fermentation and ages on fine lees for 8 months in temperature-controlled tanks. A light filtration with cellulose plates is carried out alongside minimal sulfur additions before bottling.
