## Wine making process

Tradition by Domaine De Mourchon is produced using spontaneous fermentation with partial whole-cluster inclusion, followed by a lengthy maceration of three to four weeks. The wine is aged for 12 months, with 70% maturing in wooden vats and 30% in concrete vats. A further six months of aging takes place in concrete vats. This process aims to preserve the wine's fruit purity and develop its structure and texture.
