## About this wine

Founded in 1964 by Emidio Pepe in Torano Nuovo, Abruzzo, the estate revolutionized regional viticulture. At a time when Trebbiano was viewed merely as a simple, high-yielding white grape, Emidio Pepe proved that when farmed biodynamically, foot-trodden, and aged without oak or filtration, Trebbiano d'Abruzzo could stand alongside the world's most ageworthy white wines. Today, the third and fourth generations—Sofia, Daniela, and Chiara De Iulis Pepe—manage the estate using the exact same uncompromising methods.

## Interesting facts

- White grapes are crushed by feet in wooden tubs, 350kg at a time for 40 to 45 minutes.
- Aged exclusively in glass-lined concrete tanks with zero oak wood contact.
- Half of each vintage is retained at the estate for extended bottle aging and hand-decanted before release.

## Food pairing

The wine's vibrant natural acidity, mineral tension, and generous texture cut through rich seafood fats and complement herbal seasonings, while matching earthy wild mushrooms and aged sheep's milk cheeses without overwhelming delicate flavors.

## Wine making process

Grapes are exclusively hand-picked from old vines trained in the traditional overhead pergola abruzzese system. The white grapes are crushed by feet in wooden tubs in 350kg batches to allow constant skin contact and juice interaction. Fermentation occurs spontaneously with indigenous yeasts in vitrified glass-lined concrete tanks over 30 to 35 days. The wine ages for 18 to 24 months in glass-lined concrete tanks with zero oak usage, and is bottled unfined and unfiltered with minimal added sulfur.
