The estate's unique microclimate and limestone soils yield a balanced, expressive red that captures the soul of Alentejo.

## Food pairing

This medium-to-full-bodied red wine pairs beautifully with rich, savory proteins, particularly pork and lamb, which complement its smooth tannins and dark fruit profile. The wine's balanced acidity cuts through the fat of roasted meats and pairs excellently with tomato-based sauces and mature cheeses.

## Wine making process

The grapes are hand-selected, destemmed, and gently crushed, followed by a 3 to 4-day pre-fermentative cold maceration to extract color and aromas. Fermentation occurs in temperature-controlled stainless steel vats at 26ºC with gentle pump-overs. After malolactic fermentation, the wine is aged for 6 months: 70% in stainless steel to retain fresh fruit character, and 30% in used French oak barrels for added complexity.
