## About this wine

Turonia takes its name from the medieval historical designation for the land lying between the Miño River and the Atlantic ocean in Galicia. The winemaking heritage of Quinta de Couselo traces back to 1163, when Cistercian monks from the Oia Monastery recognized the exceptional microclimate and soils of O Rosal. Integrated into Grandes Pagos Gallegos de Viticultura Tradicional in 2013, the estate focuses on low-intervention viticulture that preserves indigenous Galician varieties and highlights Atlantic coastal terroir.

## Interesting facts

- Named after ancient Turonia, a medieval territory stretching along the Miño River to the Atlantic.
- The estate's historical roots date back to Cistercian monks in 1163.
- Uniquely combines granitic and slate soils in O Rosal to produce a broader texture than purely granitic Albariños.

## Food pairing

The wine's crisp Atlantic acidity and natural saline minerality seamlessly cut through rich or raw seafood, enhancing delicate marine flavors while balancing citrus-infused dressings and grilled fish.

## Wine making process

Hand-harvested in small 15 kg crates, the Albariño grapes are chilled to 5°C and hand-sorted on a vibrating table. Destemming and cold maceration precede gentle pneumatic pressing. Fermentation takes place in temperature-controlled stainless steel tanks using native yeasts. The wine is aged on fine lees for six months to develop volume and texture prior to cold stabilization and bottling, without any oak influence.
