## About this wine

Il Mortellito was founded by Dario Serrentino in Val di Noto, south-eastern Sicily. Dario returned to his family ancestral land in 2014 to produce natural wines alongside heirloom almond and olive orchards. Tuttu translates to everything in Sicilian, referencing traditional field-blend viticulture where red and white native varieties were harvested and fermented together. Situated on white calcareous soils just kilometers from the sea, the estate yields wines imbued with distinctive coastal salinity and brightness.

## Interesting facts

- Tuttu translates to everything in Sicilian, celebrating traditional field blends.
- Founder Dario Serrentino left his social worker career in 2014 to revive his family land.
- Red and white native grapes are harvested on the exact same day and co-fermented together.
- Vineyards sit on white limestone soils just a few kilometers from the Ionian Sea.

## Food pairing

This light-bodied, chillable Sicilian red combines vibrant high acidity and subtle coastal salinity with low tannins, making it exceptionally versatile. It effortlessly bridges the gap between meaty seafood like swordfish and classic Mediterranean tomato pasta or charcuterie without overpowering delicate flavors or leaving astringent tannins.

## Wine making process

A traditional field blend of mostly Nero d'Avola co-fermented with native Sicilian red and white varieties. The grapes undergo spontaneous ambient fermentation with indigenous yeasts and eight days of skin maceration. Fermentation and aging take place entirely in temperature-neutral stainless steel tanks to retain maximum fruit purity and sea-spray freshness. The wine is bottled unfiltered and unfined with minimal added sulfur dioxide.
