## About this wine

Les Vignes de Biassou is a deeply personal project founded by Camille Larmande and Laura Estrada, representing a return to Camille's ancestral family lands in Valvignères, Ardèche. After leaving careers in the nuclear power and early childhood sectors, they took over three generations of family vineyards. The estate's name, 'Biassou', is an Occitan dialect word meaning 'little tummy', reflecting their warm, down-to-earth approach. Located in a historic valley recognized as a global epicenter for natural winemaking, they craft low-intervention wines that express the unique clay-limestone soils of the region.

## Interesting facts

- The name 'Biassou' comes from the local Occitan dialect meaning 'belly' or 'little tummy.'
- The cuvée name 'Ugni Envers et Contre Tous' translates to 'Ugni Against All Odds,' challenging the grape's reputation.
- Winemakers Camille and Laura transitioned to viticulture from careers in the nuclear power and early childhood sectors.

## Food pairing

The high natural acidity and saline minerality of this dry white wine make it an exceptional partner for fresh seafood and shellfish, cutting through briny flavors. Its light-to-medium body and clean finish also complement tangy local goat cheeses like Picodon and fresh, herb-forward summer salads without overpowering them.

## Wine making process

This wine is crafted using strict natural winemaking principles. The Ugni Blanc grapes are hand-harvested to preserve berry integrity and undergo spontaneous fermentation initiated entirely by indigenous yeasts. The process is completely free of oenological inputs, with no added sugars, commercial enzymes, or sulfites. To maintain its natural energy and structure, the wine is bottled unfined and unfiltered. Aging takes place in neutral stainless steel or concrete vessels to preserve primary fruit freshness and mineral tension, avoiding any oak influence.
