## About this wine

Crafted by Tiago Sampaio of Folias de Baco, Uivo Renegado originates from high-altitude vineyards at 650 meters in the Cima Corgo sub-region of Portugal's Douro Valley. Planted over 70 years ago in transition soils of schist and granite, the vines consist of more than 25 interplanted indigenous red and white grape varieties. The wine revives the historic palhete style, reflecting traditional local winemaking where field blends were harvested and co-fermented together.

## Interesting facts

- The name Renegado ('renegade') celebrates Tiago Sampaio's defiance of modern Douro winemaking norms.
- It revives 'palhete', a traditional Portuguese method co-fermenting red and white grapes together.
- Made from over 25 indigenous grape varieties interplanted in 70+ year old field blend vineyards.

## Food pairing

This light-bodied, highly acidic palhete style red wine performs brilliantly alongside oily fish, cured meats, and lighter grilled dishes. Its fresh acidity cuts through fat while low tannins complement subtle protein textures without causing bitterness.

## Wine making process

The grapes are hand-harvested in early September and processed as whole clusters with light foot stomping in traditional open granite lagares. The red and white grapes undergo a short three-day co-fermentation maceration driven by wild indigenous yeasts. Fermentation finishes in cement tanks (95%) and used oak barrels (5%), where the wine ages for several months on fine lees before being bottled unfined, unfiltered, and with minimal added sulfites.
