## Wine making process

The production of Laherte Frères Ultradition Extra Brut involves manual harvesting of grapes at optimal maturity. Alcoholic fermentation occurs in a mix of stainless steel tanks, foudres, and oak barrels, with partial malolactic fermentation employed. The wine is aged on fine lees for at least six months. Secondary fermentation and further aging on lees in bottle last for a minimum of 24 months, followed by an additional three and a half years of aging sur latte before disgorgement. The dosage is Extra Brut, typically around 4.5 g/L.
