## About this wine

Azienda Agricola Vicentini Agostino is a family-owned estate situated in Colognola ai Colli, in the eastern district of Valpolicella. The Vicentini family has cultivated vines here since 1929, with Agostino Vicentini initiating estate bottling in the late 1960s. Today, Agostino manages the 20-hectare estate alongside his wife Teresa and children, Emanuele and Francesca. Situated where the volcanic soils of Soave meet the limestone-rich hills of Valpolicella in the Valle dei Ciliegi (Valley of Cherries), the estate benefits from a unique microclimate that fosters energetic, aromatic red wines.

## Food pairing

This vibrant Valpolicella features refreshing acidity and smooth, low tannins that complement medium-weight dishes effortlessly. Bright acidity cuts through rich cured meats and melted cheese, while matching the tanginess of tomato-based pasta dishes and light poultry.

## Wine making process

Hand-harvested early in the morning to preserve delicate primary aromas, the grapes undergo temperature-controlled maceration and fermentation in stainless steel vats. Gentle rimontaggi (pumping over) extract soft tannins and bright color without harsh qualities. The wine is aged entirely in stainless steel tanks to retain pure fruit characteristics before bottle refinement prior to release.
