## About this wine

Ventisei Zerodue, or '2601' as it's known internally, is a white wine from Azienda Agricola Milana, a family-run winery in Olevano Romano, Lazio. The winery, founded in 1962, transitioned to organic farming in 2009 under Giancarlo Milana, who also initiated a project to highlight individual vineyard parcels. The wines are uniquely named after significant dates in the Milana family's history. This particular wine is made exclusively from Malvasia Puntinata del Lazio grapes, grown in the Colle Canino vineyard at an altitude of 355 meters on sandy, silt, and volcanic soils. The estate practices organic viticulture, using only copper and sulfur, and employs natural winemaking techniques.

## Interesting facts

- Wine names are actual family dates.
- Organic farming since 2009.
- Spontaneous fermentation with wild yeasts.
- Minimal to zero added sulfites.

## Food pairing

The wine's crisp nature and potential subtle herbal notes make it a versatile companion for lighter fare. Its acidity can cut through the richness of certain dishes, while its delicate profile complements rather than overpowers subtle flavors.

## Wine making process

Azienda Agricola Milana practices organic viticulture, using only copper and sulfur in their vineyards. The grapes for Ventisei Zerodue (2601) are hand-harvested from the Colle Canino vineyard. Vinification involves spontaneous fermentation in steel tanks, utilizing natural yeasts without the addition of selected strains. The wine is then aged for 8 months in steel tanks before being bottled. The winery aims for minimal or no sulfite additions and typically does not filter or clarify its wines.
