## About this wine

The Azores Wine Company Verdelho O Original is a white wine from Pico Island in the Azores, Portugal. The Azores Wine Company, established in 2014 by António Maçanita, Filipe Rocha, and Paulo Machado, is dedicated to the recovery and promotion of indigenous Azorean grape varieties. This Verdelho is cultivated in the unique volcanic basalt soils of Pico Island, often situated very close to the Atlantic Ocean and protected by traditional dry-stone walls known as 'currais'. The 'O Original' designation emphasizes its status as the authentic island expression of the Verdelho grape, differentiating it from Verdelhos found on the Portuguese mainland.

## Interesting facts

- Vines grow in volcanic crevices, often less than 50 meters from the sea.
- Protected by traditional dry-stone walls called 'currais'.
- The 'O Original' name highlights its unique island varietal status.

## Food pairing

The wine's high acidity and pronounced salinity cut through the richness of seafood and complement its natural sweetness. Its mineral profile harmonizes with the briny character of shellfish, while the vibrant fruit notes provide a refreshing contrast.

## Wine making process

The winemaking process for Verdelho O Original begins with whole bunch pressing, followed by natural racking after 12 hours. Fermentation is spontaneous, occurring in small stainless steel tanks or horizontal vats, utilizing native yeasts. A portion of the wine, around 30%, is aged for six months in barrels on fine lees, while the remainder is aged in stainless steel or used oak barrels, also with lees contact. Grapes are harvested manually and transported in 20kg baskets.
