## About this wine

Poggiotondo is located in the hills of western Tuscany, in the Chianti region. Owned by renowned winemaker Alberto Antonini, the estate focuses on organic viticulture to express the true terroir of the region. The 'Vermentino delle Conchiglie' (Vermentino of the Shells) is named after the fossilized marine shells found in the limestone and sandy soils of the vineyard, which impart a distinct mineral character to the wine.

## Interesting facts

- The wine's name, 'delle Conchiglie', refers to the ancient fossilized seashells embedded in the estate's vineyard soils.
- Poggiotondo is owned by world-renowned flying winemaker Alberto Antonini, who converted the estate to certified organic farming.
- The marine fossils in the soil date back millions of years when this part of Tuscany was entirely underwater.

## Food pairing

The high acidity and saline minerality of Vermentino make it an exceptional partner for seafood and Mediterranean dishes. It cuts through the richness of fried foods and complements the herbal notes of basil and olive oil.

## Wine making process

The grapes are organically grown, harvested at optimal ripeness, and gently pressed. Fermentation takes place in temperature-controlled stainless steel tanks to preserve the fresh, primary fruit aromas and vibrant acidity. The wine is aged on its fine lees for a short period to add texture and complexity before bottling.
