## About this wine

Vignoble du Rêveur's 'Vibrations' Riesling 2021 is a 100% Riesling from the Alsace appellation in France. The wine is produced by Mathieu Deiss, son of Jean-Michel Deiss, who established his own project to express an independent winemaking philosophy. The estate is committed to organic and biodynamic viticulture, with vines located in Bennwihr on Quaternary alluvial soils. The 'Vibrations' cuvée is distinguished by its minimal intervention approach and a small percentage of semi-carbonic maceration, aiming for a pure expression of the terroir.

## Interesting facts

- The producer's name translates to 'The Dreamer's Vineyard'.
- Mathieu Deiss is the son of a famous Alsace winemaker.
- Grapes are hand-harvested.
- Uses indigenous yeasts for fermentation.

## Food pairing

The wine's vibrant acidity cuts through richness and complements delicate seafood, while its minerality harmonizes with the salinity of oysters. Subtle citrus notes in the wine echo citrus elements in dishes, and its dry profile makes it a versatile partner for a range of flavors, including those with a touch of spice.

## Wine making process

The 'Vibrations' Riesling 2021 is produced using 100% Riesling grapes from Alsace. The vineyard practices are certified organic and biodynamic, with hand-harvesting employed. For vinification, 90% of the grapes are directly pressed, while 10% undergo semi-carbonic maceration for about 10 days. Fermentation is conducted with indigenous yeasts in foudres (large oak barrels). The wine is subsequently aged for 10 months in foudres, with some indications of aging on fine lees for 12 months.
