## About this wine

Victoria Torres Pecis is a fifth-generation artisan winemaker based in Fuencaliente on the island of La Palma in the Canary Islands. Taking over management of her family's historic estate following the passing of her father, she has become a renowned champion of low-intervention viticulture and volcanic terroir. Las Machuqueras is a historic single vineyard situated on the slopes of the San Antonio volcano, featuring century-old, ungrafted Listán Blanco vines crawling across pure black volcanic ash.

## Interesting facts

- The vineyard features ancient ungrafted vines up to 120 years old growing in pure black volcanic ash.
- Vines crawl low along the ground to protect themselves from intense Atlantic trade winds.
- La Palma's volcanic isolation completely shielded its vineyards from the 19th-century phylloxera blight.

## Food pairing

The bright acidity and vibrant volcanic salinity of Listán Blanco demand fresh seafood, high-acid dishes, and savory subterranean flavors like mushrooms. The wine's textured body from lees contact allows it to handle richer white meats and aged local goat cheeses, while avoiding overly sweet or intensely spicy elements that could overpower its delicate mineral nuances.

## Wine making process

Harvested manually in small crates, the grapes undergo brief oxidative skin contact for two to four days. Spontaneous fermentation occurs with native yeasts in traditional chestnut casks, neutral oak, or concrete and stainless steel tanks without temperature control. The wine is aged on its fine lees for seven to 24 months before being bottled unfiltered with minimal sulfur additions.
