## About this wine

Victoria Torres Pecis is a fifth-generation vigneron crafting exceptional low-intervention wines on the volcanic island of La Palma in the Canary Islands. Taking ownership of her family estate following her father Juan Matías Torres' death in 2015, Victoria works with ungrafted centuries-old bush vines planted directly in black volcanic ash (picón). Free from phylloxera, La Palma preserves incredible historical viticulture, which Victoria honors through traditional cellar methods, including aging in local chestnut casks.

## Interesting facts

- Vines on La Palma grow ungrafted directly in deep black volcanic ash known locally as picón.
- La Palma was never affected by phylloxera, allowing vines to reach over 100 years of age on original rootstocks.
- Victoria utilizes traditional old local chestnut casks alongside oak fudres for native aging texture.
- This dry skin-contact style offers a modern take on the island's historical sweet Malvasía tradition.

## Food pairing

Skin-contact maceration gives this orange wine light tannic grip, pronounced aromatic intensity, and vibrant acidity, allowing it to seamlessly bridge the gap between seafood, complex exotic spices, and richer savory meats like pork or roasted poultry.

## Wine making process

Harvested by hand from nine distinct sub-parcels averaging 80 years of age, the grapes undergo spontaneous fermentation with indigenous yeasts without temperature control. A portion of the fruit undergoes skin maceration ranging from 12 hours up to 6 days prior to gentle pressing. The wine is aged in a combination of 500-liter French oak fudres, neutral oak barrels, and traditional chestnut casks, preserving native texture and volcanic character.
