## About this wine

Victoria Torres Pecis is a fifth-generation winemaker producing exceptional low-intervention wines on the volcanic island of La Palma in the Canary Islands. The Sin Título series represents her experimental line, created by harmonizing distinct parcels, altitudes, and microclimates. Sourced from ancient ungrafted vines planted in volcanic soils, this cuvée reflects the raw dialectic of opposites across La Palma's extreme terroirs.

## Interesting facts

- Sourced from ungrafted vines up to 80 years old growing directly in volcanic soils unaffected by phylloxera.
- Grapes are gathered from extreme elevations ranging from high volcanic clay at 1,400 meters down to southern ash fields.
- The Sin Título label represents an ongoing experimental series aimed at finding equilibrium between contrasting plots.

## Food pairing

The high natural acidity and distinct volcanic salinity cut through rich textures, perfectly complementing fresh seafood, earthy mushrooms, and goat cheeses without dominating delicate flavours.

## Wine making process

Grapes are hand-harvested from old ungrafted vines and vinified separately by plot and variety. A portion undergoes a 48-hour cold skin maceration before gentle pressing. Spontaneous fermentation occurs with indigenous yeasts in concrete tanks, stainless steel, and neutral wooden vats. The wine ages on its fine lees without temperature control, fining, or filtration prior to bottling.
