## Wine making process

The San Patrignano 'Vie' 2017 is produced from 100% Sauvignon Blanc grapes selected from three vineyard parcels. The harvest takes place in late August to early September. A portion of the grapes undergoes whole-cluster pressing, inspired by Champagne methods, while another portion experiences approximately 48 hours of maceration on the skins at controlled temperatures. Fermentation occurs in stainless steel tanks. Following fermentation, the wine is aged for six months in stainless steel tanks on its fine lees.
