## About this wine

Vinhol Oksamytnoe LTD is a family-owned estate winery founded in 1998 in the village of Oksamytne, located in Ukraine's Danube Bessarabia region. The estate manages 550 hectares of vineyards in the Yalpuh Lake valley on land with over 120 years of winemaking history originating from Count Davydov's historical chateau. Run by second-generation owner Tetyana Tinulov and her sons Kostiantyn and Yuriy, the estate champions Odesa Black, a red variety developed in Ukraine in 1948 by crossing Cabernet Sauvignon with Alicante Bouschet.

## Interesting facts

- Odesa Black is a unique Ukrainian grape variety created in 1948 by crossing Cabernet Sauvignon with Alicante Bouschet.
- Because Alicante Bouschet is a teinturier grape with red flesh, Odesa Black yields an unusually deep dark red juice.
- The estate vineyards sit on historic lands cultivated over 120 years ago by Count Davydov.

## Food pairing

The wine's robust tannic structure and generous body make it an ideal partner for rich, protein-dense dishes like lamb and beef, where animal fats soften tannin perception. Savory barbecue glazes and rich game offal highlight the wine's spicy notes while avoiding delicate seafood that would be masked.

## Wine making process

Hand-harvested in late September 2022, the grapes undergo yield management through manual pruning. Must skin maceration takes place in stainless steel tanks for 5 to 7 days with regular pump-overs and punch-downs to extract structural compounds and color. Fermentation and short aging take place in temperature-controlled stainless steel tanks prior to bottling in lightweight glass bottles with natural cork.
